Modified atmosphere packaging (MAP) is a packaging developed on the basis of vacuum and nitrogen-filled packaging. Internationally, the packaging technology that achieves the purpose of preservation and preservation by changing the ambient atmosphere (air) around the food is called modified atmosphere packaging. Mainly used for food preservation. PP modified atmosphere packaging has a complete application in the packaging of chilled meat, coffee and vegetables. Today, it is also increasingly used in refrigerated and prepared convenience foods, especially for the packaging of freshly sliced fresh pork produce. Modified atmosphere packaging gas is mainly composed of carbon dioxide, nitrogen, oxygen and other special gases such as nitrogen dioxide, sulfur dioxide and argon. The main preservative gas, carbon dioxide, can inhibit the growth of most bacilli and fungi; oxygen can inhibit the reproduction of most anaerobic bacteria, keeping meat color and fruits and vegetables fresh. Nitrogen, an inert gas, does not react with or be absorbed by food. It is used as a filling gas to prevent slumping of packages caused by escaping gases such as carbon dioxide. Different foods and fruits have different compositions and proportions of antiseptic gases. For CA lock boxes, it is critical that the oxygen permeability matches the respiration rate.
